Here it is... PROOF that salads don't have to contain leafy greens, and they definitely don't have to be boring. This citrus and yogurt salad is one to impress your brunch guests for sure, so full of color and juicy freshness. The yogurt balances out the sweet and tart flavor of the oranges and the sprinkle of pistachios makes for a nice crunchy finish!
citrus salad with yogurt and pistachios
makes: 2 servings
time: 10 minutes
- 1 blood orange
- 1 navel orange
- I grapefruit
- 1/4 cup pistachios (chopped)
- 3 sprigs mint (chopped)
- 3/4 cup plain, full-fat yogurt
- 1 tbsp. olive oil
- 2 tbsp. lime juice
- 1 pinch sea salt
- Slice citrus into rounds, then with a knife cut off the rind of each slices. In a medium bowl, toss citrus with olive oil, lime, and mint. Spread a dollop of yogurt onto two plates and place citrus slices on top. sprinkle with pistachios and sea salt.
Tip: I like this salad really cold so I keep the citrus fruits in the fridge and might even cool down plates in the fridge in advance of serving!
