There is a super simple fun way to have a no dishes -good for you- delicious - breakfast ready every morning before you wake up = overnight oats. There are endless ways to get creative with this one but here is one of my favorites so far. Old-fashioned rolled oats with almond milk, cinnamon, and mixed berries, the perfect balance of sweet, creamy and spicy. Top off with a little honey and sliced almonds in the morning for an extra kick!
Mindful Eating Quote of the Week
This gem comes from my man Thich Nhat Hanh. It has stuck with me all week because it so quickly gets at the difference between distracted eating and just plain eating. His thoughts on eating a string bean:
"Don't chew your worries, your suffering, or your projects. That's not good for your health. Just chew the string bean"

overnight oats with mixed berries and cinnamon
Prep time: 3 mins (seriously)
1/2 cup overnight oats
1 cup almond milk
1/2 teaspoon of cinnamon
optional toppings in the morning:
- honey, sliced almonds
Mix the almond milk, oats, and cinnamon, then top with frozen berries. Put into the fridge to sit overnight. (if you are using fresh berries it is better to add them in the morning).
Note: use old fashion oats rather than instant or steel cut, the texture just ends up better.
In the morning top with honey and sliced almonds!
