Okay so to be honest, I haven’t always been a fan of radishes. As a garnish = tolerable, a centerpiece for dinner = uhh pass. Every spring I see them beautifully bursting pink at the farmer's market and think, maybe I just need the right recipe to change my mind. That day has come my friends.
I read somewhere when you oven roast radishes the flavor becomes more subtle and sweet, so I thought let's give this a go, toss in a little butter and let's see what happens. The result = a really flavorful, unique and beautiful side dish.
buttery roasted radishes with lime yogurt
servings: 3-6 (as a side dish)
time: 40 minutes
2 bunches mixed radishes* (cut in half)
2 tbsp. grass fed butter (melted)
1 tsp. dried oregano
1/2 tsp salt
1/2 tsp pepper
1/2 cup greek yogurt
1/2 lime (juiced)
1/2 cup pistachos
*I choose French Breakfast Radishes and Round Radishes
Preheat over to 375F. In a large bowl toss melted butter, radishes, oregano, salt and pepper. Spread evenly on a parchment-lines large sheet pan and roast in oven for 30-40 minutes until tender.
In a small bowl stir yogurt and lime together. Spread out yogurt mixture on a large plate. Add roasted radishes and a sprinkle of pistachios. This dish is wonderful served warm or cold.
